Interesting facts
"Chateau Pavie" is another delightful vintage with a luxurious aroma and a pure, long-lasting taste. The 2015 vintage, made from grapes harvested from 48-year-old vines, will impress those who love wines with an extraordinary level of intensity. The grapes for the wine are hand-harvested, and fermentation on the skins lasts for 3 weeks in large oak barrels at a controlled temperature of 20 °C. After that, malolactic fermentation occurs in barrels, and the resulting wine is aged in oak barrels (from 70% to 100% new wood) for 18 to 32 months, depending on the vintage. To achieve full harmony, the wine will require an additional 4-5 years of bottle aging. The producer believes that "Chateau Pavie" 2015 has a storage potential of 20 years.
About the Manufacturer
Chateau Pavie is the largest Premier Grand Cru Classé estate in Saint-Émilion. It is located on the site of an old peach orchard ("pavies" — red peaches). Grapes have been grown here since the 4th century AD. Today, the estate is owned by Gérard Perse, who acquired Chateau in 1998, renovating and reforming the cellars and winery building. Now, Chateau produces about 15,000 cases of wine per year from grape varieties such as Merlot, Cabernet Franc, and Cabernet Sauvignon. The vineyards cover 37 hectares, with an average vine age of about 45 years. The terroir varies in character. Some vineyards, located 85 meters above the Dordogne River, are based on typical clay-limestone soils with rocky subsoils. Others are located on the "milieu de cote" (mid-slope), at a height of 55 meters relative to the Dordogne River. Here, the soils consist of very fine brown limestone. In addition to the red wine "Chateau Pavie," a rosé wine "La Rose de Pavie" is also produced here. Pavie wines evoke mixed reactions from critics — some are amazed by the vibrant style of these wines, while others criticize Gérard Perse for insufficient attention to the local terroir.
