Interesting facts
The classic method of Portofino Abissi di Bisson is a sparkling wine that comes to life in Pestelle, in Trigoso di Sestri Levante, in the province of Genoa. It can be produced from grapes of the Bianchetta Genovese, Vermentino, or Pigato varieties depending on the grape variety harvested early by hand. After fermentation, which takes place in stainless steel tanks at controlled temperatures, the base wine undergoes a second fermentation, which occurs submerged in stainless steel cages at a depth of 60 meters in the Silence Bay. It is left for 18 months at a controlled temperature of 15 °C before being disgorged and subjected to traditional disgorgement without any dosage.
