Domaine de l`Herre, Sauvignon Blanc, Cotes de Gascogne IGP — a fresh and mineral Sauvignon Blanc from the southwest of France. The vineyard, covering 130 hectares, is located at the foot of the Gascogna Pyrenees and specializes in white grape varieties. Warm daytime weather and cool nights create ideal conditions for producing fresh, characterful Sauvignon Blanc. At optimal ripeness, the grapes are harvested during the coolest night hours, inerted with nitrogen to protect against oxidation, and then placed directly into the INERTYS press, where they undergo temperature-controlled maceration on the skins. Thanks to slow, gentle pressing, the juice that flows into the tanks retains its high aromatic strength. Fermentation occurs slowly at a controlled temperature and lasts about 21 days. The wine is then aged briefly on the lees before bottling.
