About the Manufacturer
Marteaux Guillaume is a winery from Bonneil, a small village that is a UNESCO World Heritage site. In 2003, after completing his studies in oenology, Guillaume took over the family business in its fifth generation. At that time, the vineyards covered only 75 acres (0.75 hectares). Today, the vineyard spans 8 hectares and will be certified Demeter from the 2023 harvest. The vineyard is located in a natural amphitheater with an elevation difference of up to 110 meters and an ideal south/southeast exposure. This geographical position protects the vines from very strong winds and offers exciting opportunities for expressing terroir through various soil types. Biodynamic farming principles are applied throughout the farm. Starting with mechanical soil treatment, promoting biodiversity in the vineyards and around them, including insect hotels, and ending with the use of biodynamic preparations. In the winery, Guillaume prefers gentle vinification and spontaneous fermentation with natural yeast strains. Even the labels are made from recycled wood. Powerful and expressive champagnes are the result of fifty years of family winemaking tradition combined with modern technologies and a firm commitment to holistic practices.
