Interesting facts
Domaine Chavy-Chouet, Meursault "Les Casse-Tetes" is a concentrated, powerful, and vibrant wine that embodies the essence of Meursault. Its structure and confident elegance perfectly convey the character of the terroir. The wine's aromatics and exceptional balance, based on richness and acidity, make it one of the greatest wines of Burgundy. The wine production begins with careful selection of grapes grown on old vines in the Meursault appellation. The harvest is done by hand, allowing only the highest quality berries to be selected. After harvesting, the grapes are taken to the winery, where they undergo gentle pressing. The resulting juice is allowed to settle for several hours to remove sediment. It is then transferred to oak barrels for fermentation. This process uses natural yeasts, preserving the unique characteristics of the terroir. Fermentation occurs in both new and old barrels, imparting complexity and depth to the wine. Light bâtonnage promotes the development of a creamy texture and aroma. After fermentation, the wine is aged on its lees in oak barrels for 9-12 months. This period allows the wine to develop a rich flavor and improve its structure. Before bottling, the wine may undergo light filtration to maintain purity and clarity. The result is an elegant and complex wine that reflects the character of its terroir and the traditions of Burgundy winemaking.
About the Manufacturer
The Chavy family has established itself as an important producer in the Côte de Beaune region, but Domaine Chavy-Chouet remained somewhat in the shadows for a time, as its owner Hubert Chavy sold most of his production to leading merchants. Everything changed when his son Romarik took over the family estate. Today, they bottle almost everything they produce under their own name. Romarik began studying at the Wine School at the age of 12 before becoming an apprentice to his godfather François Mikulski in Meursault. After that, he worked in South Africa, Spain, Greece, and Languedoc, and at the age of 22 returned to his father. Incredibly experienced for his age, winemaker Romarik is fully focused on realizing the incredible potential of his "star" vineyards. About 40% of the estate's vines are located in the village of Puligny-Montrachet, where Romarik has the best plots in such impressive vineyards as "Les Enseignères", "Les Folatières", and "Champ Gains". Romarik has dedicated his life to viticulture with a free spirit, an intense and dynamic approach. His ambitions are to produce the best wines that reflect the very essence of appellations such as Meursault, Puligny-Montrachet, Saint-Aubin, Volnay, and Pommard. The wines of Domaine Chavy-Chouet are full and rich but possess an astonishing freshness and vitality that allow for enjoyable drinking in youth. Chavy-Chouet is truly an exciting domain, and Romarik is sure to become a star in the not-so-distant future.
