Interesting facts
Sauvignon Blanc — a simple, fresh, generous dry white wine with a pleasant taste and bright aroma filled with notes of exotic fruits. The grapes for this wine are grown in the municipality of Dolegna del Collio on marl and clay soils. The hand-harvested grapes are carefully transported to the winery in small boxes. The berries undergo cold maceration in a horizontal press for 8 hours, after which the resulting juice is decanted and fermented in steel tanks at a controlled temperature of 18 °C. After fermentation, the wine is aged on the lees in the same containers for about five months. After that, the wine is bottled and further matures in bottles for a considerable time before being released for sale. This method allows the wine to become extraordinarily aromatic and well-structured.
About the Manufacturer
Azienda Agricola Livon was founded by the famous Friulian winemaking family Livon in the early 1960s when Dorino Livon purchased the first vineyards on the hills of Collio. Since its inception, the winery has continuously developed, expanded, and improved. Since the mid-1980s, Dorino's sons — Valneo and Tonino — joined him. The family tirelessly worked on developing their vineyards to reduce production in order to maximize the quality of the fruit. They completely changed the layout of their vineyards, applied unique and progressive approaches to farm management for that time: short pruning of vines, use of organic methods and high planting density, integration of indigenous plants, maintaining low yields, and building three large wine cellars for winemaking. In the period from 1992 to 1997, to remain competitive in the market, Livon decided to acquire three farms, two of which — Villa Cjopris and Tenuta Roncalto — were located in Friuli, while Borgo Salcetino was in Tuscany, in the Chianti Classico area. In 2001, with the purchase of "Fattoria Col Santo" in the Montefalco area, the estate provided consumers with a more complete range of wines. Today, "Livon" is a global company owning over 200 hectares of vineyards and producing five different brands classified as classic wines, Cru wines, and Grand Cru wines.
