Interesting facts
"Peppoli" is a fresh, lively wine with a good structure and bright fruity-berry notes and spicy nuances in the aroma. This style became possible thanks to the unique microclimate in which the grapes for "Peppoli" are grown. The vineyards are planted in the valley on particularly favorable soils rich in minerals, which are ideal for growing Sangiovese, full of vitality and fruitiness. Tenuta Peppoli, located in the heart of Chianti Classico, covers 100 hectares, of which 50 hectares are dedicated to vineyards. The first vintage of "Peppoli" was released in 1988. Each grape variety for "Peppoli" is harvested separately. The fruits are cleaned, gently crushed, and placed in stainless steel tanks. Alcoholic fermentation takes place at a controlled temperature of 26 to 28 °C to enhance aromatic expression and preserve the fruity and floral notes of each variety. Maceration, aimed at extracting soft and sweet tannins, lasted about 10 days for Sangiovese and two weeks for other varieties. At the end of the malolactic fermentation, completed by the end of winter, the final blend is composed and placed mainly in large Slavonian oak barrels, as well as in stainless steel tanks for aging.
