Interesting facts
The love of Bill and Alicia Dim for the Rhône inspired them to create this wine Mixed Blacks. They took on the challenging task of imparting a Californian character to the blend of red fruits and mineral characteristics typical of Rhône Valley wines. For this, they used the traditional GSM blend (Grenache-Syrah-Mourvèdre). The grapes come from the Shake Ridge vineyard in Amador County. Amador County is located at the foothills of the Sierra Nevada mountains. Due to the higher altitude, the microclimate here is cooler, which gives the wines depth and a wonderful flavor profile. The aging process is divided into two parts. The main part of the wine is aged in new, lightly toasted French oak barrels, which ensures excellent integration of tannins and the development of secondary aromas such as vanilla and cedar. The remaining part of the wine is aged in traditional terracotta amphorae from Italy. An amphora is an egg-shaped concrete vessel for wine. It enhances the acidity and mineral properties of the wine, determined by the terroir. The Mixed Blacks wine impresses with an abundance of red fruits and exotic spices. The bouquet features aromas of pomegranate, cranberry, and lavender complemented by notes of white pepper and tarragon. This exceptional wine unfolds in the glass, allowing one to constantly discover new flavor nuances. The wine has a long, silky finish.
