Interesting facts
The dry red wine "P.F." Bobal is distinguished by its complexity and depth of flavor. It is made from the Bobal grape variety, harvested from 90-year-old low-yield vines. The abbreviation "P.F" stands for "Pie Franco", meaning "ungrafted", as the vines were not affected by the phylloxera invasion and remain ungrafted. The grapes are grown on granite soils in the Manchuela region, considered the best terroir for expressing its varietal characteristics. After harvesting, the grape clusters are not destemmed and are fermented whole in open oak vats using natural yeasts. The finished wine is aged in French oak barrels for 10 months.
About the Manufacturer
Ponce is a small family winery managed by Juan Ponce. Although the Ponce family has been growing grapes for many generations, the first own vintage of wines was released only in 2005. The highlight of Ponce's vineyards is the old Bobal grapevines, some of which were planted over 85 years ago. Juan Ponce adheres to biodynamic viticulture methods and produces wine using traditional methods from each vineyard plot separately to maximally express the individuality of the terroir through the wine. Ten years after the winery's founding, Ponce wines became a symbol of the philosophy of new winemaking in Spain: biodynamically and organically grown grapes, as well as a focus on expressing the character of the terroir and the strong influence of natural wines from France.
