Interesting facts
Wine Pascal Jolivet, Sancerre Blanc is a blend of Sauvignon Blanc grapes harvested from three vineyards in the Sancerre region with different soil types: — vineyard "Les Caillottes" with very chalky soils, 50% Sauvignon Blanc in the blend; — vineyard "Les Terres Blanches" with clay-limestone soils, located on the highest hill in the area, 30% Sauvignon Blanc in the blend; — vineyard "Silex" has an eastern exposure and chalk-siliceous soils, 20% Sauvignon Blanc in the blend. The vineyards are surrounded by forest on one side, and on the other side, they are bordered by the Loire River, creating a particularly mild microclimate ideal for growing grapevines. Pascal Jolivet's philosophy is to use a minimalist winemaking style. Allowing nature to take its course, Jolivet minimally intervenes in the vinification process. The grapes for making Sancerre Blanc are hand-harvested and gently pressed. The must is fermented naturally with wild yeasts at controlled temperatures. The highlight of this drink is that the grapes from each vineyard are fermented separately. This allows the characteristics and individual features of each terroir to fully manifest. Aging on the lees takes place in steel containers, after which the final blend of the three Sauvignon Blancs is created.
About the Manufacturer
The Pascal Jolivet winery, founded in 1987, is one of the youngest and most dynamic in the Loire Valley. The estate specializes in wines from Sancerre and Pouilly-Fume, produced in the classic style of the Loire Valley. Many of them rank highly in ratings and are served in the best restaurants in France. The vineyards, covering approximately 70 acres, are located on steep slopes around the town of Sancerre, on the western bank of the Loire, as well as on the opposite bank near Pouilly-Fume. The soils of Sancerre contain a lot of limestone, clay, and silica. These are ideal conditions for growing Sauvignon Blanc. The Pouilly-Fume vineyards are on glacial soils containing a large amount of quartz, which gives the wines a mineral character. Pascal Jolivet adheres to the idea that nature creates the perfect wine, so interventions in the natural processes of vinification are minimized. All Pascal's wines are elegant, refined, and beautifully balanced. "All my wines are refined, elegant, with a pure aroma and taste — this is the style of Pascal Jolivet. In my winery, there is one paradox, which is that I use technologies that allow me to control the fermentation process while not interfering with it. As a result — natural wines that are easy to drink," says Pascal Jolivet.
