Interesting facts
Domaine de Cazaban, "Demoiselle" Minervois AOP — a charming dry red wine, produced using Grenache Noir and Syrah grapes. The berries grow on the company's vineyards on clay-limestone soils. The average age of the vines is 25 years. The harvest is conducted manually, and at the winery, the fruits undergo sorting and destemming. Vinification is carried out using a gravitational method, which helps preserve the quality and integrity of the grapes. Maceration lasts about 2 weeks, maintaining a sufficiently low temperature (maximum 20 °C) for slow extraction. The Syrah wine is aged in 500-liter oak barrels, while the Grenache Noir wine is aged in stainless steel tanks for 8 months. After blending, the wine is bottled without filtration. The annual production volume is about 5500 bottles.
