Interesting facts
Domaine de Cazaban, "Parti Pris" Pays d`Aude IGP — a dry red wine, produced using Pinot Noir grapes. The berries grow on the company's vineyards on limestone plateaus at an altitude of 250 meters above sea level. Harvesting is done by hand at the optimal ripeness of the berries in 15 kg boxes, and at the winery, the fruits are sorted. Vinification of whole clusters (50%) is carried out using a gravity method, which preserves the quality and integrity of the grapes. Maceration lasts 8 days. The wine is aged in demi-muids of the Stockinger type and bottled at the end of April. The annual production volume is about 3500 bottles.
About the Manufacturer
Located at the foot of Mount Noir, a few kilometers north of the city of Carcassonne, Domaine de Cazaban spans 22 hectares. The vineyards are cultivated according to organic farming practices (since 2010). Since 2013, 13 hectares of vineyards have been converted to biodynamics (Demeter certified). The cultivation of the vines is carried out with particular care and meticulousness. In addition to wine production, Domaine de Cazaban offers tourism services. The estate features several cozy cottages and a swimming pool. Additionally, wine tastings can be conducted right at the winery.
