Walsh Whiskey was founded in 1999 by Bernard and Rosemary Walsh, who currently own 80% of the company. Rosemary was inspired to create the company during a trip with her husband to France. They were staying at a ski resort and hosted many guests in their chalet. After each meal, guests were treated to Irish coffee (a cocktail made of hot coffee, Irish whiskey, and sugar). Preparing 20-30 servings of the beloved drink was enjoyable but also exhausting for the hospitable hostess. The Walshes decided there had to be a better solution to enjoy a great drink without excessive effort and inefficient time expenditure. Thus, Hot Irishman Limited was born. Initially, the company intended to produce only Irish Cream, and in 2001, "Irishman" Irish Cream was released. In an effort to develop the "Irishman" brand, a long-term contract was signed in 2006 with Irish distilleries for the supply of raw materials for whiskey production. Thus, in 2007, "Irishman" 70 Superior was born, followed by other whiskeys that marked the era of the triumphant rise of the "Irishman" brand. Today, the brand is popular in over 36 countries across 4 continents. The modern whiskey and other beverages production facility operates in Waterford. The company's headquarters is located in an ancient family mansion in the rural area of Carlow, in the heart of Irish barley fields.
