Interesting facts
"Montefalco" is a red dry wine, representing a blend of Sangiovese (70%), Sagrantino (15%), Cabernet Sauvignon, and Merlot (15%), grown in Umbria. The vineyards are located on steep slopes; the exposure is eastern and southeastern. The soils are clayey, with a medium degree of texturing. The yield of the plots is maintained at 80 quintals per hectare; the planting density is 5000 plants per unit area. Harvesting is done manually and with machines (the choice of method depends on the variety) from mid-September to mid-October. Each variety is harvested and vinified separately. The berries undergo careful sorting, then are gently pressed and left for a 10-12 day maceration on the skins. Alcoholic fermentation without the addition of industrial yeast cultures takes place in steel tanks at controlled temperatures. The wine matures in Slavonian and French oak barrels for a year. The clarification of the wine occurs naturally through decantation and racking. The "rest" in the bottle lasts at least 4 months. The "Montefalco" wine has a storage potential of 7-8 years.
About the Manufacturer
For people, as well as for the land, there is a calling. Thus, the first admiration for the hills of Todi evoked in Leonardo Baccarelli and his son Luca an unaccountable and irresistible desire to have their own vineyards here. This was their first step towards the work of their lives, a passion and obsession. After meeting talented enologist Dona Hartmann, the Roccafiore winemaking project was born, which also includes a hotel, wellness center, and restaurant. The Baccarelli family cultivates their lands following organic farming methods, which are confirmed by the relevant EU certifications. By building a modern winery equipped with advanced technologies and a strict quality control system, Roccafiore has demonstrated its commitment to excellence. It became the first in Italy to use solar panels to generate its own electricity. Among other measures taken to protect the environment were: the use of lighter bottles, biofuels for tractors, and water-saving technologies. Roccafiore is not just about wines; it is a symbiosis of soil, microclimate, vines, traditions, and the character of its country. It is proof that taste and quality are the result of the interaction of heart and mind. The main philosophy of the Roccafiore winery is the assertion that man is the center of the universe, so wines know that they depend on the people who create them and take on the character traits of those who worked on their creation.
