Interesting facts
Maggio Vini cultivates its Grillo vineyards exclusively using organic methods. The vines are grown using the Guyot system on red sands at an altitude of 170 meters above sea level. Vinification is carried out while respecting the natural qualities of the grapes and includes a 12-hour phase of cryomaceration in contact with the skins and cold fermentation. The sparkling wine is produced using the Charmat method for secondary fermentation and slow fermentation at low temperatures. Afterward, the Grillo wine is aged for 1 month in steel and 1 month in bottle.
