Interesting facts
"Le Grand Noir" is a line of wines named after the Cathars (priests) who wore exclusively black garments and lived until the early 17th century in the area of the current vineyards. The priests believed that people, regardless of their status and significance, should be humble before God ("God's sheep"). Since winemaker R. Joseph likes to stand out among all, he came up with the idea to place a black sheep ("black sheep") on the labels of this line. The wines fully reveal the character and potential of the local terroir. "Le Grand Noir" Sauvignon Blanc is an elegant white wine made from Sauvignon Blanc (97%) and Marsanne (3%) grapes. The berries grow on clay-limestone soils in the Languedoc Roussillon and Minervois appellations. Harvesting is done mechanically at night. The grapes undergo cold maceration followed by gentle pressing. After cooling, the must undergoes fermentation. "Le Grand Noir" Sauvignon Blanc pairs excellently with white meat dishes, fish, and seafood.
