Laroche, Chablis "Les Chanoines" is a fresh, full-bodied, and rich white wine that allows you to enjoy the classic pure taste of Chardonnay, grown in the famous Chablis region. Previously, the wine was known as Chablis AOC, but it has undergone rebranding. This wine pays tribute to the canons of Saint Martin de Tours, who lived in Obediencerie in the 9th century and made significant contributions to viticulture. Produced 100% in stainless steel tanks, this wine reflects the mineral notes typical of the Kimmeridgian terroir of Chablis. The aroma unfolds with exquisite hints of gooseberry, complemented by notes of butter. "Les Chanoines" is excellent as an aperitif at a festive event or family dinner, and pairs well with seafood or Japanese cuisine dishes. This wine is primarily made from grapes selected from the cool terroirs of Chablis. A long growing season ensures freshness and minerality. In the vineyards, Laroche adheres to a global approach of responsibility and sustainability, resulting in agro-ecological viticulture. The grapes are pressed whole bunches under pneumatic pressure, the juice is extracted and left to settle in specially designed wide steel tanks for 12 hours at a temperature of 12-15 °C. Fermentation takes place in steel containers at 16 °C and lasts for 15 days. The majority of the young wine (95%) undergoes malolactic fermentation, which gives the taste a rounder texture. Aging on fine lees lasts about 6 months. Before bottling, thorough filtration is carried out to preserve the natural character of Chablis.
