Interesting facts
The Prosecco is made from Glera grapes, a variety typical of the Treviso region, considered one of the most ancient grape varieties, highly prized since Roman times. The harvest ripens by the end of September. After gentle pressing, the must is fermented at a controlled temperature using selected yeasts. After fermentation, the wine is filtered and aged for some time, then re-fermented in an autoclave with the addition of tirage liqueur at a temperature of 16 °C. Once the sparkling wine is ready, it is cooled to -4 °C and left to mature on the lees. The wine then undergoes isobaric filtration in a second autoclave and is bottled.
About the Manufacturer
Since 1881, the history of the Treviso region has been inextricably linked with the history of the Serena family, the founders of the Montelvini winery. The work and passion for their craft have passed from father to son through five generations. However, the current president of Montelvini, Armando Serena, broke with family business tradition and built a new winery on a plot of land in Venegazzu. It is at this facility that the wines which have become a benchmark for Italian wines are produced. Today, Montelvini wines are distinguished by their unique style, combining winemaking traditions with innovation, and the highest quality.
