Interesting facts
Bortolin Angelo, Valdobbiadene Prosecco Superiore DOCG Extra Dry is an extra dry sparkling wine made from Glera (Prosecco) grapes grown on steep slopes in the Valdobbiadene area. The soils are partially alluvial, with glacial and iron deposits and low organic matter content. The Glera grape variety shows its best qualities when used to create sparkling wine. The drink is very delicate, airy, fresh, and open, allowing it to pair well with a variety of dishes. The light residual sugar makes the taste of the sparkling wine extremely soft. The harvest is collected by hand when the berries reach optimal ripeness. At the winery, the grapes undergo delicate pressing using sophisticated equipment. The production uses grape juice obtained by free-run. Notably, from 100 kg of grapes, a maximum of 70 liters of wine can be obtained. This is followed by a decantation phase at a cold temperature of 5-10 °C in steel tanks for 10-12 hours. The clarified must is fermented for about 15-20 days in stainless steel tanks at a constant temperature of 18-20 °C. As a result, a base wine is produced. Subsequently, the sparkling wine is made according to the Italian Charmat method, which involves secondary fermentation in sealed autoclaves, where the previously obtained base wine ferments with sugar and yeast. This technology allows the original aromas of the grapes to be preserved and achieves the unmistakable fruity-floral composition that distinguishes DOCG Valdobbiadene from any other sparkling wines. After bottling, the sparkling wine "rests" for 30-40 days before release.
About the Manufacturer
The Bortolin Angelo winery is a symbol of excellence on the winemaking scene of Valdobbiadene. The family business Bortolin Angelo is known for its high-quality sparkling wines. The winery is located in Guia, the most suitable area for producing sparkling wine in Treviso. Wine has been produced here since 1968, when Angelo Bortolin, the son of a farmer, founded the company, inspired by the picturesque landscapes of the Valdobbiadene hills. Angelo initially paid great attention to investing in the technological equipment of the winery. Since 1983, through the modernization of its facilities, Bortolin Angelo began to specialize in the production of sparkling wines. Since 1993, Angelo's three children (Cristina, Paola, and Desiderio) began to participate in the company's activities. The last to join the family business was Desiderio Bortolin as a majority shareholder in January 2010. Angelo still participates in the company's activities but leaves all decision-making powers to his successors: a strategic move that allows the company to harness the entrepreneurial spirit and ideas of the new generation.
