Domaine Pattes Loup Chablis AOC

Tom Pico spent his entire childhood in the vineyards of a small village called Courgis in the Chablis region, and as a hereditary winemaker, he did not think long about his future profession. Working alongside his father and grandfather, both winemakers, he quickly inherited a passion for winemaking. Therefore, the grown-up Tom went to study viticulture and oenology in Beaune. Upon returning from his studies in 2004 to the family estate Bois d`Yver, Tom was firmly convinced of the need to transition to organic viticulture, although his father did not support his aspirations. His passion for winemaking, curiosity, desire to preserve the environment in its pristine form, and the health of loved ones were decisive factors in this decision. Taking a few hectares of land from his father for new plantings, Tom founded his own estate, Domaine Pattes Loup, on the outskirts of Chablis and began producing organic wines. In this challenging and new endeavor, he was assisted by neighbor friends Alice and Olivier de Moor, renowned winemakers and also advocates of organic viticulture. In 2006, the first vintage from Domaine Pattes Loup was released, which achieved such dizzying success that Tom`s father reconsidered his beliefs about organic viticulture. In 2009, the vineyards of Domaine Pattes Loup were certified organic, and today Tom is already considering transitioning to biodynamic viticulture. Gradually, Tom Pico purchased and rented new lands and vineyards, thus expanding his holdings to 15 hectares. Today, Domaine Pattes Loup is considered the greatest discovery in Chablis in the last 10 years, and the estate`s wines are written about by the most famous critics and outstanding publications such as "La Revue du Vin de France", "Bettane & Desseauve", "Decanter", "The Wine Advocate", and even "The Wall Street Journal."
