Interesting facts
El Grillo y la Luna, "Grillo", Somontano DO — a deep, elegant, and expressive dry red wine made from Syrah, Cabernet Sauvignon, Grenache, and Merlot grapes. The grapes are grown in the Somontano vineyards, across several plots with varying soil compositions, at an altitude of about 400 meters above sea level. The entire harvest is collected and selected by hand. The harvest date is determined individually for each plot through grape tasting. Thus, with love, calmness, and determination, the winemakers of El Grillo y la Luna produce a wine with excellent balance and freshness, an exceptional wine where the terroir and each grape variety reach their best expression. The yield does not exceed 1.2 kg of grapes per vine. The grapes arrive at the winery in 12-kilogram boxes, which are placed in a refrigerated container at a temperature of 4 °C. A double manual selection is then carried out: first whole bunches, and then individual berries. Only the best grapes are allowed for vinification. Each variety and berries from different plots are vinified separately. Pre-fermentation cryomaceration is conducted to extract anthocyanins and polyphenols responsible for color and aroma for 5 days at a temperature of 10 °C. Maceration and 8-day alcoholic fermentation occur in 4000-liter French oak barrels under strict temperature control (not exceeding 32 °C) with daily punching down of the cap. Post-fermentation maceration, which lasts about 30 days, allows achieving the necessary level of tannic astringency. Malolactic fermentation takes place in 225-liter French oak barrels from different forests. The wine is aged for 13 months in the same barrels. During the first 5 months, batonnage is performed twice a day to impart a creamy texture and volume to the wine. The wine is then left untouched until bottling at a temperature of 16 °C. Only the best barrels will eventually become the wine "Grillo". Fining is done by gravity method. Decanting is recommended one hour before serving. "Grillo" has been awarded gold medals and recognized as "Best in Show Somontano" at the "Mundus Vini" competitions in 2022, 2021, and 2019, a grand gold medal at the "Concours Mondial de Bruxelles, 2019", silver medals at the "Concours Mondial de Bruxelles" in 2021, 2016, and 2012, as well as at the "International Wine & Spirit Competition, 2016", and received an award for best design at the International Wine and Spirits Competition "IWSC: Wine Atwork & Bottle Design".
