Ca` Montebello, Sangue di Giuda wine is primarily made from Croatina and Barbera grapes grown in the Ca’ Montebello vineyards with eastern and western exposure, located on the low hills of Oltrepo Pavese. The harvest is collected in the last two weeks of September at its peak ripeness. After gentle pressing, a 12-hour cold maceration occurs at low temperatures. The fermentation process takes place in steel containers at a controlled temperature. Before bottling, the must is placed in airtight tanks where natural secondary fermentation occurs.
