Interesting facts
Pinot Noir used for maceration comes from the Buzancy terroir, probably the largest terroir for this grape variety. A drop of Chardonnay adds freshness and minerality. Hand-harvested from the Buzancy Grand Cru vineyard, with vines over 30 years old, gravitational pressing, vinification in temperature-controlled stainless steel tanks, part of the must is fermented in oak barrels, biodynamic viticulture, manual disgorgement, short maceration, with 7% red wine added to the blend before secondary fermentation.
About the Manufacturer
The Maillart family has been growing grapes since 1753. Nicolas Maillart is the ninth generation managing the vineyards in Chamery. Remaining true to the traditions of the Champagne region, the Maillart estate is planted only with Pinot Noir (75%) and Chardonnay (25%). The majority of the vines are planted on the mid-slope, in the Buzancy terroir, which is favorable for growing and harvesting in a cool climate. The grapes undergo a 52-hour maceration to give them a beautiful color. Bottles are aged on the lees for at least a year and disgorged just before release.
