Conceived by Celestino Gaspari, the wine "Kairos" is meant to embody the future and past of winemaking: prospects and traditions. This is why its blend includes almost all popular grape varieties worldwide: Corvina, Corvinone, Rondinella, Croatina, Cabernet Franc, Cabernet Sauvignon, Merlot, Syrah, Oseleta, Teroldego, Petit Verdot, Garganega, Trebbiano Toscano, Chardonnay, and Sauvignon Blanc. "Kairos" is produced every year, allowing its creator to enjoy playing with the varieties, whose proportions change depending on the quality of the harvest of each variety. "Kairos" pairs with the wine "Harlequin," which uses grapes from the same plots but in years with better weather conditions. The name "Kairos" translates from Greek as "opportune, timely," reflecting the idea of the importance of precise timing in winemaking. The grapes for "Kairos" are harvested exclusively by hand, taking into account the ripeness of each variety, from vines aged up to 40 years. Vinification occurs in steel and cement containers. The cryomaceration and fermentation period with local yeasts lasts 20-25 days, with winemaker intervention limited to manual handling of the must and pomace. The wine is then transferred to French oak barriques, where it is aged for at least 2 years without racking. After bottling, the wine matures in the bottle for at least 6 months.

The name of the winery "Zyme" translates from ancient Greek as "yeast," while the company's logo in the shape of a pentagon reflects five key aspects of winemaking: man, vine, earth, sun, and water. The founder of the winery is Celestino Gaspari, who officially began wine production in 2003, although his interest in winemaking was awakened in early childhood. A turning point in Celestino Gaspari's fate was his acquaintance with his future father-in-law — the famous winemaker Giuseppe Quintarelli. It was at the Quintarelli winery that the future owner of "Zyme" gained valuable knowledge and experience that helped him open his own production in the heart of the Valpolicella Classico region. Today, the winery "Zyme" consists of two blocks: a modern building where vinification processes take place and a wine cellar carved into a sandstone wall. Here, winemakers use their magic to create wines that are gaining popularity worldwide.
