About the Manufacturer
The Defaix family has been involved in winemaking for four centuries, with traditions passed down from father to son. The family estate is located on the ancient territories of the Chablis region, chosen by the monks of Pontigny for winemaking a thousand years ago. Domaine Daniel-Etienne Defaix covers 28 hectares of land where excellent Chardonnay is grown. Vinification is carried out in compliance with mandatory rules that, according to the owners of the Domaine, make the wine unique, fully and eloquently representing the terroir of Chablis. The harvest is collected when optimal ripeness is reached, and subjected to slow pressing for three hours. Alcoholic fermentation lasts three weeks and is carried out on natural lees at low temperatures to preserve the natural fullness of taste and aroma. Systematic malolactic fermentation is necessary to avoid the risk of fermentation of the finished wine in the bottle. Before going on sale, the wines are necessarily aged from 6 to 12 months. Continuing the family tradition, the current owner of the estate, Daniel-Etienne Defaix, does everything possible to ensure that the fame of the Defaix winemakers does not fade, and that the family business, like a vine, yields excellent results.
