Interesting facts

The wine is made from 100% Sauvignon Blanc from limestone soils planted in the early 1990s. Fermentation occurs without the addition of yeast – fermentation begins at around 12 degrees Celsius, then rises to 14 degrees and continues without temperature control. The wine is aged on the lees (sur lie) for at least 6 months to impart additional character and enhance its flavor profile. "Calcite" is named after the limestone soils predominant in the vineyards, which give the wine its characteristic mineral notes. The estate practices sustainable viticulture and employs traditional winemaking methods to preserve the purity and expressiveness of Sauvignon Blanc.

About the Manufacturer

The ancestors of Francis Blanchet have been growing Sauvignon Blanc in Pouilly-Fumé since 1684. Today, the estate owns 13.5 hectares of vineyards – exclusively Sauvignon Blanc in Pouilly-Fumé – which are cultivated following sustainable practices. The estate is best known outside of France, as nearly all of its production is exported to the USA, with a significant portion going to Norway and other countries. The domaine operates on sustainable principles: harvesting is done by hand, and wine fermentation occurs naturally (without added yeast) in temperature-controlled steel tanks.
