Interesting facts
The grapes for this wine come from several plots around the village of Santenay. Harvesting is done manually in small batches to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration takes place in open wooden vats and stainless steel tanks for 3 to 4 weeks. The wine is aged in oak barrels for 18 months, with about one-third of the barrels being new. The aging potential of Santenay is 5-10 years.
About the Manufacturer
Domaine Marguerite Carillon was founded in Meursault. The vineyards stretch around the village in Côte de Beaune, from Aloxe-Corton in the north to Santenay in the south. The estate then expanded its holdings in Côte de Nuits in the village of Nuits-Saint-Georges. Later, in Côte d'Or, Carillon began developing Domaine Marguerite in Chablis. Starting with 10 hectares, the vineyard was located in Vallée de Vau-Courcier, at the entrance to La Chapelle-Vaupelten, 4 km north of Chablis. However, more vineyards were needed to offer a wider range of wines. The estate purchased land from several winemakers in the Chablis area. All these wooded lands were analyzed, and it turned out that they had been planted with vines before the phylloxera crisis in the 1860s. Permission was then obtained to replant Chardonnay. The lands were classified under the Chablis designation: in 1998, an additional 10 hectares were added. These new vineyards are very steep (at a 70° angle), and the grapes must be harvested by hand. The rocky soil imparts a wonderful minerality to the wines, which is highly valued in Chablis. Today, Domaine Marguerite Carillon has about forty hectares of vineyards in Chablis, Côte de Nuits, and Côte de Beaune.
