Interesting facts
"Le Difese" is the "third" wine of the estate. The name "Le Difese" translates to "the tusks of a wild boar." Historically, this area has always been home to many wild boars. The grapes for "Le Difese" are harvested from young vines planted in stony soils. Poor soils, proximity to the sea, and low yields all contribute to the production of well-ripened, high-quality grapes. The berries are hand-harvested. Each variety is vinified separately. Maceration on the skins takes place in stainless steel tanks under temperature control and lasts 13-15 days for Cabernet Sauvignon and 15-18 days for Sangiovese. The wine is then aged for 10-12 months in barrels made of French and American oak and at least 3 months in bottles. A light filtration is performed before bottling. The wine has a storage potential of at least 7-8 years.
About the Manufacturer
Tenuta San Guido is one of the most famous Italian wine producers, whose vineyards are located in the Tuscan subregion of Bolgheri. In addition to wines, the estate produces traditional extra virgin olive oil and grappa. The estate is owned by the Italian winemaking family Incisa della Rocchetta, who are rightly considered pioneers in the cultivation of Bordeaux grape varieties in Italy and the creation of "Super Tuscan" wines. The Sassicaia vineyards are situated at an altitude of 80 meters above sea level. The nearby sea and the hills surrounding the vineyards significantly influence the climate, protecting them from the wind. The vineyards are planted using the "cordone speronato" technique. The yield is about 5,000 kg per hectare.
