Interesting facts
Sous le Château is one of the climates of the Saint-Romain vineyard. It is located at the foot of a rocky outcrop that was a feudal castle until the 11th century, when it was burned and destroyed. These steep vineyard slopes were abandoned after the phylloxera epidemic and were replanted in the 1970s. The terroir of Saint-Romain is considered the most perfect in the appellation, with its southeast exposure and rocky limestone soil allowing for the production of characteristic wine that combines richness of aromas and elegance. This cuvée is produced from grapes from three different vineyards of varying ages. The year 2022 was record-breaking for the number of sunny days. Production method: 100% whole clusters Static settling for 24 hours Alcoholic and malolactic fermentation in oak barrels 12 months (including 4 months of blending) 100% in barrels (14% new oak barrels)
About the Manufacturer
For the Leflaive family, winemaking is a heritage passed down from generation to generation as a treasure. Olivier is the eighteenth of them. In 1984, he founded his own winery and wine house Olivier Leflaive. Within a few years, the name became unique, a benchmark in Côte de Beaune. Later, his brother Patrick joined him, then his daughter Julie and former son-in-law Jean Subeyran. Owning 100 hectares of vineyards, 26 of which belong to the estate, and 82 vineyards, including the famous Grand Cru Batard-Montrachet, Chevalier-Montrachet, and Montrachet, the estate pays tribute to these renowned Burgundy vineyards, respecting traditional methods and the transfer of knowledge from generation to generation. Hand harvesting and skilled barrel aging, carried out by his passionate team, allow the House to create elegant wines that are remarkable in every way. The white wines are characterized by exceptional finesse, while the reds have perfectly balanced intensity. Valentin Champagne, Olivier Leflaive's latest creation, transports his Burgundy knowledge to the Champagne terroir, creating a completely unique sparkling wine. In 2020, the management of the hotel was transferred between Olivier and Julie, who completely redesigned it, giving it a modern look.
