Interesting facts
Domaine de Cazaban, "Belles de Vigne" Pays d`Aude IGP — an exquisite dry white wine, produced using Chardonnay grapes. The berries grow on the company's vineyards on clay-limestone soils. The average age of the vines is 25 years. The harvest is conducted manually at the optimal ripeness of the berries, and at the winery, the fruits are cooled to 6 °C for 12 hours before pressing whole clusters. Vinification is carried out using a gravitational method, which helps preserve the quality and integrity of the grapes. Fermentation at a temperature of 14-16 °C lasts 2-3 weeks. The wine is aged in steel tanks for 4 months and bottled after light filtration.
