Interesting facts
"Iugum" Merlot-Cabernet Sauvignon is a full-bodied, warm, aromatic red wine made from Merlot and Cabernet Sauvignon grapes. The wine "Iugum" was first released in 1995 and is still considered one of the best red wines of Alto Adige by many experts. The name "Iugum" translates from Latin as "yoke", which is used by a pair of oxen to pull a plow. The "Iugum" vineyard, covering 1.1 hectares, is located on the Magré/Magrè slope at an altitude of 300 to 350 meters above sea level. This is one of the warmest vineyards in Alto Adige, facing east and southeast. The warm temperature and soil structure with high clay content determined the choice of Bordeaux varieties cultivated here. Merlot is harvested from mid-September, and Cabernet Sauvignon from mid-October. The grapes are destemmed, crushed, and vinified separately. Fermentation takes place in open wooden barrels for 10 days, with the must punched down twice a day. After malolactic fermentation, Cabernet Sauvignon is aged in new barrels for 12 months, while Merlot is aged in second and third-use barrels. After 12 months, the final blend is created, which is aged first for 8 months in concrete tanks and then for 24 months in bottles.
About the Manufacturer
The company Peter Dipoli was founded in 1987 in the town of Neumarkt, in the Italian wine region of Alto Adige. The founder, Peter Dipoli, was born on February 25, 1954, studied winemaking at the San Michele all'Adige School, and then worked for 5 years at a research station before returning to his parents' farm in Laimburg with the intention of creating his own wines. He conducted thorough research and concluded that the steep slopes near Bolzano are ideal for viticulture. To this end, he acquired a 1.2-hectare vineyard in the Cortaccia province of Alto Adige and replaced the indigenous grape variety grown there with the international variety Sauvignon Blanc, as the high slopes of the hills provided ideal conditions for its cultivation. Cool temperatures and a long growing season contributed to achieving full ripeness of the berries while maintaining fresh acidity. The first harvest of Sauvignon Blanc after replanting the vines was collected in 1990. Lacking his own winery, Peter Dipoli vinifies the harvest at a friend's winery and releases the white wine Voglar in a quantity of 1637 bottles. After purchasing another 10 acres of land, the winemaker begins to grow Merlot and Cabernet Sauvignon and releases two red wines, Fihl and Iugum. Today, the company's vineyards cover an area of 4.6 hectares. A new phase in Peter Dipoli's life was the acquisition of an old farm in Neumarkt in 1998, which he converted into a winery. Here, with full dedication and inspiration, he began creating complex red and white wines that reflect the characteristics of the Alto Adige terroir. Each year, Peter Dipoli produces about 40,000 bottles of wine. Peter Dipoli can rightly be called a master of winemaking in Alto Adige, achieving incredible success in his craft.
