Interesting facts
Castello della Sala, Pinot Nero has been produced since 1990 exclusively from Pinot Noir grapes and is in a sense the "alter ego" of the wine "Cervaro della Sala." Together they represent two different expressions of the complex and refined soul of Castello della Sala. The Pinot Noir for this wine is grown on 4 hectares of vineyards located at an altitude of over 400 meters above sea level on limestone soils rich in fossils and sedimentary sand dating back to the Pliocene period. The harvested grapes are separated from the stems and gently pressed, and the must is transferred to small conical stainless steel tanks, where it undergoes a three-day cold maceration and fermentation for a week at a controlled temperature of 26 °C. The wine is then transferred to French oak barrels, where malolactic fermentation and aging occur for several months. After bottling, Pinot Nero ages in the ancient cellars of the castle before being released to the market.
About the Manufacturer
Castello della Sala is a 14th-century fortress located about 18 km from Orvieto. The castle, whose estate extends over 500 hectares, of which 170 hectares are planted with vines, was purchased by the Antinori family in 1940. Castello della Sala is a region very suitable for growing white grape varieties. But there is one exception: Pinot Noir finds ideal conditions in this terroir to express itself at its best. The Antinori family has a history dating back to 1385, and today it is managed by a representative of the 26th generation of the family — Marquis Piero Antinori. Much of the credit for Italian wines being among the best examples of global winemaking goes to his talent as a winemaker and tireless pursuit of perfection, and the name Antinori has become a symbol of innovation and quality. Today, Antinori owns several wineries in various regions of Italy, as well as vineyards in Chile, California, and Hungary. The company strives to preserve the uniqueness of the wines characteristic of each locality, with quality and Italian elegance being their main characteristics. Many Antinori wines, thanks to their innovative approach and virtuoso blends, have literally revolutionized the wine market and rival the best Bordeaux examples in their properties, while being favorably distinguished from them in terms of cost. The world-renowned wine expert Robert Parker stated that: "Antinori is undoubtedly the greatest name in Italian winemaking. During a tasting of Antinori wines, the main thing is that an understanding of wine quality is instilled."
