Interesting facts
Made from Pinot Noir grapes grown in a Premier Cru vineyard. The vines, planted in 1956 on an area of 2.61 hectares, grow on the southern and southeastern side of the slope, on limestone-rich soils, most favorable for cultivating Pinot Noir. The grapes, harvested by hand at optimal ripeness, are carefully sorted and partially (80%) destemmed. They are then placed in temperature-controlled containers for fermentation. During this process, with daily pumping over and manual cap punching, constant monitoring of the density and temperature of the must is conducted. After 15-20 days, the cuvée is drained into French oak barrels (20% new) and aged in the cellar for 14-18 months. A very beautiful vintage from 2014 is designed for long-term storage and will require at least 4-5 years of additional aging before tasting.
About the Manufacturer
The Domaine Marguerite Carillon was founded in Meursault. The vineyards stretch around the village in Côte de Beaune, from Aloxe-Corton in the north to Santenay in the south. The estate then expanded its holdings in Côte de Nuits in the village of Nuits-Saint-Georges. Later in Côte d'Or, Carillon began to develop Domaine Marguerite in Chablis. Starting with 10 hectares, the vineyard was located in Vallée de Vau-Coursier, at the entrance to La Chapelle-Vaupelten, 4 km north of Chablis. However, more vineyards were needed to offer a greater variety of wines. The estate purchased land from several winemakers in the Chablis area. All these wooded lands were analyzed, and it turned out that they had been planted with grapevines before the phylloxera crisis in the 1860s. Permission was then obtained to replant Chardonnay. The lands were classified under the Chablis designation: in 1998, 10 hectares of land were added. These new vineyards are very steep (at a 70° angle), and the grapes must be harvested by hand. The stony soil gives the wines a wonderful minerality, which is highly valued in Chablis. Today, Domaine Marguerite Carillon has about forty hectares of vineyards in Chablis, Côte de Nuits, and Côte de Beaune.
