About the Manufacturer
Fanny Sabre took over the family Domaine in 2006. In 2000, when Fanny's father passed away, the estate was left without a winemaker. At that time, Fanny was still quite young, and the famous Philippe Pacalet, a hereditary winemaker considered one of the best specialists among the new generation of Burgundy oenologists and a proponent of natural winemaking, was invited to take on the role. Fanny assisted Philippe and learned a lot from him. Today, she owns 7 hectares of vineyards cultivated using biodynamic methods. The vineyards of the Domaine stretch from Meursault to Beaune and beautifully showcase the diversity of the Côte de Beaune terroir. Fanny Sabre always emphasizes that the history of traditional Burgundy winemaking is of particular importance to her, and she strives to adhere to its principles. However, another important principle in the cellar for Fanny is minimal intervention in the vinification process. Her wines represent a harmonious symbiosis of tradition, modernity, and femininity, making them recognizable worldwide.
